After the Clear Black Night Halloween Dance Party, I stayed at my cousin's house. Around 8 in the morning, my niece woke me up by acting like she is a monster trying to eat me. But when she slowly crawling up the bed, I grabbed her and tickled her.

These are my nieces (Frances and Arielle). I slept beside them. After lunch time, we went to the cemetery to visit our grandfather.

Oriental Flavored Cucumber Salad

1 each English cucumber
1 tablespoon Rice vinegar
1 tablespoon Soy sauce
1 tablespoon Vegetable oil
1/2 teaspoon Oriental sesame oil
1/2 teaspoon Salt
1/2 teaspoon Sugar
1/4 teaspoon Hot Chinese chili paste
1 each Small clove garlic -- minced

  • Trim ends off cucumber and cut into 1 inch chunks.
  • Combine rice vinegar with soya sauce, vegetable oil, sesame oil, salt, sugar, hot chili paste and garlic.
  • Mix dressing with cucumbers and serve at room temperature.

KFC Coleslaw

8 1/8 cups cabbage
1/3 cup carrot
1 teaspoon onion chopped fine
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 cup milk
3/4 cup buttermilk
2 tablespoons lemon juice
1/2 cup mayonnaise

  1. First core the cabbage and shred the cabbage fine using the fine disk for the shredder attachment to the mixer.
  2. Then shred the cabbage.
  3. In a bowl combine with a whisk combine the buttermilk, mayonnaise, milk and lemon juice mix till well combined.
  4. Then add the seasoning.
  5. The last step is to add the sugar add the sugar to the sauce until well mixed in.
  6. Add the sauce to the cabbage and carrot mixture and mix well and allow the mixture to marinate for 13 hrs.
  7. Do to the waste of chicken in the restaurants the Colonel created a recipe to help use the chicken that was unable to be sold.
  8. So he devised the potpie recipe. See chicken could only sit and be sold for 2 hrs after it is fried.

Focaccia

2 packages fast−rising dry yeast
2 cups tepid water
2 tablespoons sugar
4 tablespoons olive oil
1/2 cup salad oil
1 teaspoon table salt
5 1/2 cups unbleached white bread flour
3 cloves garlic, crushed
1/4 cup olive oil for topping
1 tablespoon rosemary
1 tablespoon kosher salt

  • Dissolve the yeast in tepid water.
  • Add the sugar, olive oil, salad oil, and table salt.
  • Mix in 3 cups of flour and whip until the dough begins to leave the sides of the mixing bowl, about 10 minutes.
  • Mix in the remianing flour by hand or with a dough hook and knead the dough until it is smooth.
  • Allow the dough to rise twice in the bowl, and punch down after each rising.
  • Oil two baking sheet, each 11 x 17 inches, and divide the dough between the two pans.
  • Using your fingers, press the dough out to the edges of each pan.
  • Cover and allow to rise for about thirty minutes, and brush with a mixture of the crushed garlic and oil reserved for topping.
  • Sprinkle with rosemary and kosher salt.
  • Bake at 375 for 30 minutes.

Tuna Party Salad

2 Envelopes of gelatin
1/2 cup Cold water
1 cup Chili sauce
3 tablespoons Lemon juice
1 cup Mayonnaise
1 cup Whipping cream -- whipped
1 cup Ripe olives -- quartered
1 cup Celery -- finely diced
2 cans Tuna -- drained

  • Soften gelatin.
  • Heat sauce to boiling.
  • Remove from heat and add softened gelatin and stir until dissolved.
  • Add lemon juice.
  • Chill until partly congealed.
  • Fold in mayonnaise, cream, olives, celery and tuna.
  • Pour into a two quart casserole.
  • Refrigerate until firm.

Batangas: A Great Getaway Destination

Batangas is one of the places in the Philippines which houses several tourist spots that the country is being proud of. It is approximately two and a half hours from Manila proper and is strategically located at the southern coast of Metro Manila where you can find Anilao, which is known for its diving sites. Here you can also find Taal Volcano and Taal lake and of course, Tagaytay.
There are a lot of things to do in Batangas that a short vacation will not do. You can see caged tigers, swim in their one-of-a-kind swimming place where the reef is carved at the foot of the ladders to make it as a small swimming area, snorkel at Sombrero island to see the beautiful colors of various corals.



There are fresh-water beaches in the towns around the Lake -- San Nicolas, Agoncillo, Cuenca, Balete, Tanauan and Talisay. Salt-water beaches abound in the following towns: Matabungkay (Lian town), Nasugbu, Calatagan, Calaca, Lemery, Taal, San Luis, Bauan, Lobo, and Laiya (San Juan town). Or you can opt to explore their mountains! There is mountain trekking in Mt. Maculot and in Mabini and Nasugbu towns. There are also several island tourist destinations, like Tingloy, Verde Island, Ligpo Island, and Fortune Island and also Industrial Parks and various manufacturing industries dotting the shoreline.

The place is also made famous by its trademark “balisong” – butterfly-like knives, which originated from Barangay Balisong in the town of Taal, hence the name. Panutsa or peanut brittle, Sinaing na Tulingan (small tuna in vinegar), suman (rice cakes wrapped in banana leaves), the longganisa and tapa, the achara and bagoong, kapeng Barako, sweets like macapuno, Ube and pastillas are also some of the craved foods in the area. If after eating a sumptuous meal makes you thirsty, you can try their mura juice with mura meat – a young coconut juice with the fruit's meat, really good when served very cold mixed with condensed milk for sweetness... Or if you prefer hard drinks don’t forget to try Lambanog from San Juan town. It's a local brew from Cane.

Salad Nicoise

  • 1/2 pound new potatoes, quartered
  • 1/4 cup chopped fresh parsley
  • 1/4 cup pitted nicoise olives
  • 1/2 onion, thinly sliced
  • 1 (6 ounce) can tuna
  • 1/3 pound fresh green beans - rinsed, trimmed and blanched
  • 1/2 pound mixed salad greens
  • 1 cup lemon vinaigrette
  • 3 hard-cooked eggs, quartered
  • 3 roma (plum) tomatoes, thinly sliced
  • 1 tablespoon capers
  • 4 anchovy filets
  1. Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain and cool.
  2. In a large bowl, combine the potatoes, parsley, olives, onion, tuna and green beans. Refrigerate for 2 to 4 hours.
  3. In large bowl, toss greens with vinaigrette and top with chilled potato mixture. Garnish with eggs, tomatoes, capers and anchovies.

Apple Pie

* 1 1/4 cups all-purpose flour
* 2 teaspoons white sugar
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/4 cup butter
* 1/4 cup lard
* 1 egg yolk
* 2 tablespoons milk

* 8 apples - peeled, cored and cut into thin wedges

* 1/2 cup white sugar
* 1/4 cup brown sugar
* 1/2 teaspoon ground cinnamon
* 1 1/2 tablespoons all-purpose flour
* 2 tablespoons butter, softened

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C.)
2. In a large bowl, combine flour, 2 teaspoons white sugar, baking powder and salt. Cut in 1/4 cup butter and lard until mixture resembles coarse crumbs. Blend egg yolk and milk, add to flour mixture and stir until mixture forms a ball. Pat onto the bottom and about 1 inch up the sides of an 8x12 inch baking pan. Arrange apple wedges in rows lengthwise on top of dough. Cover with streusel.
3. To make the streusel: In a medium bowl, combine 1/2 cup white sugar, 1/4 cup brown sugar, cinnamon and 1 1/2 tablespoon flour. Cut in butter and blend into coarse meal.
4. Bake in the preheated oven for 60 minutes. Cover with foil the last 25 minutes to prevent over browning.

Baking pie is a rather straightforward technique, but a few tips can only help to make your pies come out looking and tasting perfect!

I got a package

Yesterday, Mitch gave us a heads up that the shirt from Paraiso Philippines has been shipped already. I was not expecting to receive today. But this morning, our guard told me that I have a package. So, I immediately went down stairs to pick up my QuikPac. (I was really impressed with 2GO, they are really Quick. lol)

I already knew what was inside: two Paraiso Philippines shirts, one for me and one for Ktrix. They are the early Christmas treats from Paraiso Philippines for members of Paraiso Philippines forum.

I asked my husband to model it for me, he agreed. But he does not want to give it back to me. He said it's for him. He's still wearing it...

Also, Mitch said, "May nakaipit dun na something from me heehee! Not much, remembrance lang." And here it is... a very cute bracelet. (Sis, I love it and I'm still wearing it.) Thank you so much sis. I really love it.

Once again, thank you Paraiso Philippines... thank you Mitch. I really like the gifts. Kisses from me.

Baked Macaroni and Meat

9 x 12 x 4 pan
1 lb Macaroni, cooked
2 lbs Ground Beef
6 Tbsp Butter
1 cup Onion, chopped
1 Tbsp Salt
1-1/2 tsp Pepper
1/2 tsp Cinnamon
4 Tbsp Tomato Paste
2 Eggs
1/2 cup Romano or Parmesan Cheese, grated
Cream Sauce
8 Tbsp Butter
1/4 cup Flour
1 qt warm Milk
4 Eggs
½ tsp Salt

  • Saute onion in melted butter.
  • Add ground beef, stirring frequently, until browned.
  • Cover and cook for about 20 minutes.
  • Add salt, pepper, cinnamon, and tomato paste and cook for another 10 minutes, stirring frequently.
  • Combine with cooked macaroni.
  • Add eggs and cheese and blend well.
  • Pour into greased dish.
  • Cover with sauce.

SAUCE:
  • Melt butter and add flour.
  • Remove from heat and add warm milk slowly to keep smooth.
  • Beat eggs slightly and add to hot mix slowly to prevent curdling, add salt and cook until thickened.
  • Pour over meat mix and spread evenly.
  • Bake at 375° for about 30 minutes-till custard is set.

Oriental Green Salad

1 cup Leaf lettuce -- torn
1 cup Chinese cabbage -- torn
1 cup Mung bean sprouts
1/2 cup Bamboo shoots; sliced -- cannd
1/4 cup Carrots -- thinly sliced
1/4 cup Celery -- thinly sliced
1/4 cup Broccoli -- chopped
3 tablespoons Low-sodium soy sauce
3 tablespoons Rice vinegar
2 tablespoons -- water
1/4 teaspoon Fresh garlic -- minced
1/4 teaspoon Fresh ginger root -- minced
*cals
*gm protein
*gm fat
*gm carbo
*mg sodium
*gm fiber

Salad:

  • Combine all vegetables in a large bowl.
  • Toss to mix. Set aside.

Dressing:
  • Combine all dressing ingredients in a blender or small jar.
  • Process briefly or shake well to combine ingredients.
  • Pour over salad and toss to coat.

Serve at once. Serves 4.

Pinoy Party at Yoville

My sister Kissxhugs hosted a party for Pinoys in Yoville... I got to meet new friends. And of course, a party would never be complete without pictures, so here they are:

After the party, we visited each other's house.  We went to Nini's bf house which is located in Brookside.   I really like this house...

Now, it's my house turn.  This is my living room... I love color pink and purple, isn't obvious?

Then,  Nini invited us to her house.  See the picture below, I'm with Kiss and Nini.   (Kiss is in the picture, trust me)

And since Ktrix, aka Scratch, is always missing in action, she took a photo of herself in her living room.

Cold Tuna Macaroni Salad

  • 1 (12 ounce) package macaroni
  • 3 tomatoes - peeled, seeded and diced
  • 3 stalks celery, chopped
  • 1 (12 ounce) can tuna
  • 1 1/2 cups light mayonnaise
  • 1 tablespoon Italian-style salad dressing
  • 1 tablespoon white sugar
  • 1 pinch ground black pepper
  1. boiling water, cook pasta until al dente, rinse under cold water and drain.
  2. In a large bowl, combine the pasta, tomatoes, celery and tuna.
  3. Prepare the dressing by whisking together the mayonnaise, salad dressing, sugar and pepper. Add to pasta salad, mix together, and refrigerate for 1 hour.

Chocolate Banana Peanut Cookies

1 c Brown Sugar, packed
3/4 c Peanut Butter
1/2 c Shortening, Butter flavored
3/4 c Banana, ripe mashed
2 ea Eggs
1 c All-Purpose Flour
1 c Whole Wheat Flour
2 ts Baking Powder
1/4 ts Salt
300 g Chipits Semisweet or Milk chocolate chips
3/4 c Peanuts, unsalted, coarsely chopped

  • With fork beat together sugar, peanut butter and shortening until well blended.
  • Stir in banana and eggs; blend.well.
  • Stir in remaining ingredients.
  • Drop by tablespoon measure onto ungreased baking sheets.
  • Bake in 350F(180C) oven 12 to 15 minutes or until cookies are golden brown.
  • Cool.
  • Store in an airtight container.
  • Makes about 4 dozen.

NOTE: Cookies freeze well.

Sicilian Ricotta Cheesecake

* 2 pounds ricotta cheese
* 2/3 cup white sugar
* 1/3 cup all-purpose flour
* 6 eggs
* 1/4 teaspoon ground cinnamon
* 2 teaspoons orange zest
* 2 teaspoons vanilla extract
* 1/8 teaspoon salt


1. Preheat oven to 300 degrees F (150 degrees C). Set rack in the middle of the oven. Butter and flour a 9 1/2 inch springform pan, and tap out excess flour.
2. Place the ricotta in a large mixing bowl, and stir it as smooth as possible with a rubber spatula. Stir the sugar and flour together thoroughly into the ricotta. Stir in the eggs 1 at a time. Blend in the vanilla, cinnamon, orange zest, and salt. Pour batter into the prepared pan.
3. Bake in the center of the oven for about 1 1/4 to 1 1/2 hours, until a light golden color. Make sure the center is fairly firm, and the point of a sharp knife inserted in the center comes out clean. Cool on a wire rack. It will sink slightly as it cools. Cover, and chill till serving time.

Sliced Cucumbers in Yogurt

Cucumbers
1/2 teaspoon Salt
1/4 cup Low-fat plain yogurt
1/2 teaspoon Sugar
1/2 teaspoon Lemon juice
1/8 teaspoon Celery seeds
1/8 teaspoon Ground cumin
1/8 teaspoon Pepper

  • Pare and thinly slice cucumbers.
  • Place in small bowl.
  • Sprinkle with salt; stir.
  • Let stand 10 minutes.
  • Stir together yogurt, sugar, lemon juice, celery seeds, cumin and pepper in small bowl to mix well.
  • Transfer cucumbers to colander; rinse with cold water.
  • Squeeze with hands to extract as much liquid as possible.
  • Return to bowl.
  • Stir in yogurt mixture.
  • Refrigerate covered until serving.

Makes 4 servings.

SPICY VEGETABLE SOUP

2 tablespoons extra-virgin olive oil
1 large onion, diced
1-3 teaspoons hot paprika, or to taste
2 14-ounce cans vegetable broth
4 medium plum tomatoes, diced
1 medium yellow summer squash, diced
2 cups diced cooked potatoes (see Ingredient note)
1 1/2 cups green beans, cut into 2-inch pieces
2 cups frozen spinach (5 ounces)
2 tablespoons sherry vinegar or red-wine vinegar
1/4 cup chopped fresh basil or prepared pesto

  • Heat oil in a Dutch oven over medium heat.
  • Add onion, cover and cook, stirring occasionally, until beginning to brown, about 6 minutes
  • Add paprika and cook, stirring, for 30 seconds.
  • Add broth, tomatoes, squash, potatoes and beans; bring to a boil.
  • Reduce heat to a simmer and cook, stirring occasionally, until the vegetables are just tender, about 12 minutes.
  • Stir in spinach and vinegar; continue cooking until heated through, 2 to 4 minutes more.
  • Ladle soup into bowls and top with fresh basil or a dollop of pesto.

NO-BAKE MACARONI & CHEESE

8 ounces whole-wheat elbow noodles (2 cups)
1 10-ounce package frozen chopped broccoli
1 3/4 cups low-fat milk, divided
3 tablespoons flour
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground white pepper
3/4 cup shredded extra-sharp Cheddar cheese
1/4 cup shredded Parmesan cheese
1 teaspoon Dijon mustard

1. Bring a large pot of water to a boil. Cook pasta for 4 minutes. Add frozen broccoli and continue cooking, stirring occasionally, until the pasta and broccoli are just tender, 4 to 5 minutes more.
2. Meanwhile, heat 1 1/2 cups milk in another large pot over medium-high heat until just simmering. Whisk the remaining 1/4 cup milk, flour, garlic powder, salt and pepper in a small bowl until combined. Add the flour mixture to the simmering milk; return to a simmer and cook, whisking constantly, until the mixture is thickened, 2 to 3 minutes. Remove from the heat and whisk in Cheddar, Parmesan and mustard until the cheese is melted.
3. Drain the pasta and broccoli and add to the cheese sauce. Return to the heat and cook, stirring, over medium-low heat, until heated through, about 1 minute.

Chocolate Covered Cherry Cookies

1 1/2 C Flour
1/2 C Unsweetened cocoa powder
1/4 T Salt
1/4 T Baking powder
1/4 T Baking soda
1/2 C Butter (or margarine,)
Softened
1 C Sugar
1 Egg
1 1/2 t Vanilla
48 Maraschino cherries
Frosting
6 oz Semisweet chocolate chips
1/2 C Sweetened condensed milk
Cherry juice (4 to 5 tsp)

  • In bowl, stir together flour, cocoa, salt, baking powder and baking soda.
  • In another bowl, beat butter and sugar until fluffy.
  • Add egg and vanilla to butter-sugar mixture and beat well.
  • Gradually add dry ingredients to butter-sugar mixture and beat until well blended.

  • Shape dough into 1-inch balls.
  • Place on ungreased cookie sheet and push down center of each ball with thumb.
  • Drain cherries and reserve juice.
  • Place 1 cherry in center of each indentation.
  • Heat oven to 350 degrees.

  • For frosting, put chocolate chips and sweetened condensed milk in small saucepan.
  • Heat until chocolate melts.
  • Stir in 4 teaspoons cherry juice.
  • If too thick, add more juice.

  • Spoon 1 teaspoon frosting over each cherry.
  • Spread to cover cherry.
  • Bake 10 minutes or until done.
  • Do not overcook.
  • Remove to wire rack and cool.
  • The cookies freeze nicely.

BEAN SALAD

1 cup Sugar
1/2 teaspoon Salt
1 cup Vinegar
16 ounces Green beans, can -- drained
16 ounces Yellow beans, can -- drained
16 ounces Lima beans, can -- drained
16 ounces Garbanzo beans, can -- drained
16 ounces Red kidney beans -- drained
1 each Green pepper -- slivered
4 each Celery -- sliced
3 each Onions, medium -- sliced thin

  • Combine sugar, salt vinegar in pan, bring to boil for 1 min.
  • Cool.
  • Toss all other ingredients together and pour the vinegar mixture over them.
  • Marinate for 24 hrs in refrigerator, stirring occasionally.
Cal: 313.
